If you’re a runner you have heard about this cookbook. It was released last summer and quickly became a favorite cookbook among my runner friends. Here’s a little more information about the cookbook:

Sound good? It did to me and that’s why I purchased the cookbook over the holidays last year. Here are 5 recipes I think you should try from the cookbook!
26.2 Trail Mix
I’m a HUGE snacker so this recipe is perfect for me. I can still snack, without all the guilt! Bonus – you get to enjoy dark chocolate chips. For this recipe the authors provide you with a few options for nuts, seeds, dried fruit and ‘other’ items and you get to mix and match from each group. My favorite combination was cashews, sunflower seeds, figs and dark chocolate chips. The “.2” is a sprinkle of fine sea salt and cinnamom and it really helps to enhance the flavor!
Can’t Beet Me Smoothie
I’m a sucker for smoothies, and beets, so this recipe was an instant winner! There’s lots of goodness going on in this smoothie – beets, blueberries, banana, ginger, almond butter, coconut water and almond milk. It’s not too sweet and very filling.
High-Altitude Bison Meatballs with Simple Marinara
I love pasta and pasta loves me 🙂 I have to admit that I’ve made this recipe twice – once with ground beef and once with ground turkey. I still have to try it with bison which I’m hoping to do next month. I think that the dried oregano, minced garlic and parmesan cheese adds a lot of flavor to the meatballs. The simple marinara sauce is also supper yummy and tastes so much better than anything you would buy in the supermarket.
Oregon Berry Crumble
Runners love sweet treats – I think that’s a fact! This crumble is full of blueberries, strawberries, oats and walnuts…AND you get to top it off with vanilla ice cream. How yummy does that sound?
Superhero Muffins
I think that everyone that has this cookbook has recommended the Superhero Muffins. They are easy to make, super yummy, and best of all, portable. I also love that the authors mention “don’t fear the butter” because it’s a healthy fat. These muffins have oats, zucchini, walnuts and chocolate chips among other wholesome ingredients. These muffins make a great breakfast or pre-workout treat.
I’ve had this cookbook a few months and I would definitely recommend it. There are still so many recipes that I need to try, so there might be a part 2 to this post sometime in the future!

I love this cookbook! The only one of these recipes Ive tried is the superhero muffins- I make those every week! I want to try the meatballs but I can never find bison. I think Ill try it with beef or turkey like you did!
