Freekeh is an ancient roasted grain with a nutty, chewy texture. To me, the texture is a cross between rice and qunioa. It comes in 3 tasty varieties – original, rosemary sage and tamari. It has 6 grams of protein and 4 grams of fiber per serving.
Freekeh is very versatile. It can be used in soups, salads, as a main dish or side dish. I decided to use it as a side dish with chicken and broccoli.
I have to say I was a little worried that I wouldn’t like it (since I had never tried it before), but it was really good! The texture was great and the flavor was not overbearing (this was for the original flavor). It paired very well with my lemon garlic chicken and steamed broccoli.
For my second package (the tamari flavor), I used it as the grain (instead of rice) for a shrimp stir fry. Again, totally delicious. I will also add that it’s very filling as well. I took both meals as lunch to work and I didn’t need my typical late afternoon snack (apple). Freekeh also provides many recipes on their website.
