Happy Friday! As usual, since it’s the last Friday of the month, I’m linking up with Marcia from Marcia’s Healthy Slice for Runfessions. Let’s get this party started!
I runfess that I’m looking forward to my staycation next month
I’m finally taking a week off this year. Since I have off on July 5th for the 4th of July holiday, I decided to take off the rest of that week. Luckily I didn’t have too many meetings that week so it was easy to move things around so that I could take the days off. Of course this means next week is going to be super busy, but it’s all worth it. My dad has a few appointments that week that I have to take him too, but other than that I don’t have any plans. I kind of feel like I’ve been running 100 miles an hour since April so it will be nice to slow down for a few days. Fingers crossed for good weather!
I runfess that I’m super excited about the upcoming Summer Olympics
I have been obsessed with the Olympics since the 1996 Summer Olympics in Atlanta. I have such respect for these athletes and how hard they train to be the best in the world. I’m most excited to watch gymnastics, track and field, swimming and basketball – but I normally find time to watch all of the different events. It’s a bummer that the athletes this year won’t get the full experience due to Covid-19 restrictions but I pray that they all can stay safe and healthy.
I runfess that I’m looking forward to trying new recipes this summer
My dad and I have committed to cooking one new recipe a week during the summer. I’m looking forward to this as I’m in a serious food rut and need some inspiration when it comes to meals. Earlier this week we cooked chicken piccata and it amazing. I’ve had it at restaurants before but never made it myself. We both gave it an 8/10 and wrote down some things in the recipe to tweak for next time.

I’ve always been into the Olympics, since I was a little girl. Something else that my parents passed down to me.

I’m the only one in my family obsessed with the Olympics, lol. My parents and sister will watch it but I dedicate many hours to watching it, lol.
Hope that you have a great vacation in a few weeks! It seems like July is a nice time to take some time off. Even though I’m not traveling anywhere, I’m still happy to not have to go to work, lol.

Like you and I see Judy as well – I have always loved the Olympics! It will be a different experience for the athletes but I’m glad it’s happening. Some of my favourite athletes from Botswana probably won’t be able to compete next time because of their age, so I’m happy they’ll get a final hurrah.

I’m a loser… I keep forgetting to watch the Olympic trials (and I call myself a runner). I seldom watch any TV, so it’s not in my routine. We have day-long rain & storms on tap for tomorrow, so maybe I’ll get a chance to see some action. So glad to hear Daddy Greene is going so much better!

I haven’t watched as much of the trials as I would like due to work and just being busy but I will be setting time aside to watch as much of the olympics as possible!
My dad has always liked to cook so it’s nice to see him back in his element again.

Thanks Marcia! Sine my dad has always enjoyed cooking, it’s nice to se him back in the kitchen. I think it’s helping with his recovery too Just getting back to doing ‘normal’ things is a great bonus.

Thanks Michelle! I’m feeling kind of burnt out so I know a vacation is necessary at this point, lol.
My dad has always loved to cook so I’m happy that he’s feeling well enough to get back to it. And the benefit is that we both get to try some new food items 🙂

I am going to take a staycation this summer too! It will be really nice to take some time off. Work has been so busy! I am hoping to get some things done around the house while I’m off, and maybe relax a little too:)

Me too! I LOVE the Olympics! My big events are swimming, track and field and gymnastics- but I’ll watch anything and everything. I’ve been watching a lot of the trials, and I’m enjoying it so much.
A staycation sounds great! I’m taking a week off work, but we’re going to Austin. I’m looking forward to it, but also know I’ll be tired going back to work afterwards.

Cooking with your dad sounds so sweet and a great way to surprise each other with new recipes. I am obsessed with the Olympics too, and have been watching the track and field trials religiously this week. I actually wrote about my favorite moments, because there has been some great ones.

We were doing some cleaning in the basement and stumbled upon a cookbook that he got about 2 years ago, so we decided to put it to good use, lol. Also he has always loved to cook so I’m happy that he’s feeling well enough to do that now. He just made chili earlier today!

That’s awesome that you have 2 weeks off in July! I’ll still have about 3 more weeks of vacation to use up before the end of the year so I hope I can take off some more time in the Fall.
2021 has been A LOT so far but I’m hopeful things will get a little more hectic as we roll into summer.

My mom is the same way – she doesn’t really like to try out new foods. I always tell her to at least try it first and then decide you don’t like it, lol.

Enjoy your time off! I am a rugby fan and I miss the summer matches (mainly in June) but I will spend many hours in front of tv for the Olympics games.

I am also excited about the Summer Olympics! Track and field and swimming is what I am most excited about. That is great you and your dad are cooking more. I’ve been doing that with my mom and I am learning her secret recipes. Ha, I am sure hers is better than mine.
